Extremely low 0.1 acidity, coupled with extremely low oxidation - Estate produced and bottled.  Producer follows principles of Integrated Crop Production to protect the environment and human health.

Beautiful coupage of Arbequina & Cornicabra varietals.  This producer`s oils are extremely popular with Michelin Star chefs due to their clean, fresh flavours and versatile profiles for all cuisine styles.  

Olives crushed within one hour of harvest for three weeks after the week of the full moon in October.

Producer:   Pago Baldios San Carlos, Mid-Western Spain.  The location where Holy Roman Empire Emperor, Charles V chose to seclude himself from the stressors of his kingdom.

Since 2016 Oro San Carlos is a special coupage just for The Olivar Corp of 2 oils having become favorites by Michelin Chefs of top-of-world restaurants such as El Celler de Can Roca (see S Pellegrino top 10 for last 5 years).

A fantastic combination of smooth, creamy texture with a sweeter version of herbs and leafy greens.  Some tasters discern subtle notes of citrus, apple and nuttiness. Finishes with a smooth pepper.  Extremely well-balanced and versatile for just about any food pairing.
